- Abstract
Protective effects of high pure carnosic acid (CA) (98.3%) against lipid oxidation of sunflower oil during accelerated storage were studied. CA was prepared from rosemary (Rosmarinus officinalis L.) leaves. CA at three different concentrations, i,e. 100 (CA-100), 200 (CA-200) and 300 mg/kg (CA-300) were added to preheated RBD sunflower oil. BHA at 200 mg/kg served as standards besides the control. Peroxide value (PV), thiobarbituric acid-reactive substances (TBARS), free fatty acid (FFA) content and p-Anisidine value (AnV) were taken as parameters for evaluation of effectiveness of CA in stabilization of sunflower oil. Results from different parameters were in agreement with each other, suggesting the highest efficiency of CA-300 ,followed by CA-200, CA-100, and BHT. Results reveal CA to he a potent antioxidant against lipid oxidation of sunflower oil.
