- Abstract
In recent years, based on the so-called healthy lifestyle, food industry has sought to replace sugar with artificial sweeteners in its products. The aim of the research carried out on the premises of the Institute of Hospitality Management in Prague was to compare sugar and extract of the Stevia rebaudiana plant in strawberry ice cream mix. The on-campus sensory evaluation involved 129 student respondents. 85% of respondents rated the ice cream mix containing the Stevia rebaudiana extract as unsatisfactory. In contrast, the strawberry ice cream mix containing sugar was overwhelmingly (92%) described by respondents as taste-appropriate.
