- Abstract
A well-balanced diet is the primary factor that affects the length of life and protects our body against diseases of civilization. The antioxidants derived from fruit and vegetables are the group of biomolecules present in the diet, which play an important role in maintaining the health. It is believed that the protective properties of fruit and vegetables are due to the presence of exogenous antioxidants. A high intake of fruit and vegetables probably reduces the risk of many diseases of civilization as a result of the joint impact of various antioxidants. Several studies indicate that consuming less popular vegetables such as brussels sprouts, broccoli or asparagus causes a significant reduction in oxidative damage. Most likely this is because some vegetables or fruit are rich in antioxidants, which are not vitamins, such as polyphenols and anthocyanins, but which are highly effective neutralizing free radicals.
