Study on the Inhibition of Nitroso Reaction by Microemulsion of Quercetin.

- Abstract
To improve the solubility of quercetin in aqueous solution, O/W microemulsion system containing tween 80-alcohol-peanut oil-water was prepared. The enhancing effect of microemulsion on the solubility of quercetin was preliminarily examined and solubility of quercetin increased from 4.8 to 319.1 µg/mL. Under the simulated condition of gastric, the inhibition of nitroso reaction by microemulsion of quercetin were studied. The results showed that the microemulsion of quercetin has strong effect on disconnecting NDMA and scavenging sodium nitrite. The maximum disconnecting rate of NDMA is 89.28% and the maximum eliminating rate of sodium nitrite is 90.47%.
