- Abstract
The abilities of genistein and quercetin and their derivatives in free radical scavenging of · OH and · O2- and DPPH were exploited by using Fenton reaction with 0-phenanthroline chromogenic reaction, pyrogallol autoxidation method and UV-vis spectrophotometry, respectively. The results show that the abilities of quercetin-Cr complex in scavenging of the three free radicals were much stronger than those of quercetin. At the same time, the stability and anti- autoxidation ability of quereetin-Cr complex were also improved. The abilities of genistein-Cr complex in scavenging free radical of · OH and · O2- were stronger than those of genistein. Especially, the ability in free radical scavenging of · OH was greatly improved. The abilities of glycoside derivatives of genistein in scavenging of the three free radicals were not obviously improved compared with genistein. Thus ,quercetin-Cr and genistein-Cr complex are free radical scavenging agents with high potential and more stability, and are new drug candidates for diseases related to free radicals.
