- Abstract
Food additive is any ingredient added to food intentionally, not for the purpose of nourishment, solely for the purpose of altering the physical, chemical, biological or sensory characteristics of food. The importance of food additives from the technological point of view is obvious. However, it is necessary to study the possible toxicological risks that can be caused by the frequent ingestion of these substances. In this sense, this work aims to gather information about the additives and the risks entailed by their consumption through rescues in the literature in a systematic review. The study is characterized as descriptive exploratory, in which the LILACS, MEDLINE and SciELO databases were used as research instruments, in order to gather scientific papers, published between 2012 and 2016, that approached the exposed topic. The following descriptors were used: "food additives"; "Food toxicology" and "food industry". The consumption of food easily accessible by the population is increasing because of the practicality and pleasant taste offered, however the consumption of these products can cause health problems due to the numerous chemical additives used. As regards the toxicity of these additives, according to ANVISA, synthetic flavorings can cause gastric irritation; According to WHO dyes are possibly carcinogenic substances; Already the food enhancer in sensitive people can cause headache, nausea, weakness. In addition, uncontrolled or excessive changes in the individual's body may occur, produced by the immune system, causing a hypersensitivity reaction due to the presence of foreign antigens. The main additives related to hypersensitivity are the artificial dyes, used as food excipients, being present in numerous products. They may also be used in the manufacture of medicines that may induce various symptoms of hypersensitivity to the skin, respiratory system or general symptoms. In this context, a more in-depth study of food additives and the toxicological consequences they offer to consumers is required, as well as making this information available to the population in order to enable a change in dietary habits.
